Did You Know
Mistral is made by removing the gluten. We use an enzyme called Clarex in the brewing process which de-natures the gluten in the grains lowering the levels of gluten in the beer. We then send each brew away for testing to ensure that gluten levels meet the legal criteria for gluten-free beers of <20ppm.
